So my 36 gallon bowfront tank is 30" long.

Will a lighting set up that is 21" long be good? (I was thinking about the 1x55 watt bright kit from AH supply)

Also....the glass top I have does not have any sort of hood on it. It's just glass. For someone who is familiar with those AH Supply kits......will I need some sort of hood to surround the reflector? Or can I just rig up the reflector over my tank? I suppose without a hood the extra light will be blinding people in the room?

hmmm perhaps I've just answered my own question.....I appreciate any info or advice though.

The 55w kit will light the tank perfectly without heating it up too much.
You probably could get away with just using the kit, though it would look much nicer (and be more durable) if you built a simple housing for it.
