I just put a tank together with a leaf litter substrate. I would like to add springtails into the litter, but I was wondering what they will munch on. Should I throw a little yeast into the mix every once in a while? Thanks

They should eat the decaying leaf matter and frog waste once they are in there. I haven't added yeast and there are usually springtails in my tanks (just have to look for them), and I am not too sure if that would be a good or bad thing. Hopefully someone else will chime in about this :D .

Some info on yeast.
Yeast produces CO2 by fermenting sugar into alcohol. This doesn't mean that the yeast will produce CO2 and alcohol, but I woundn't take the chance. I have springtails in a lot of my tanks and they just live of the rotting leaves and frog poo. I keep 3 cultures of these guys going and just add them to my tank every so often. I don't know how many make it to reproduce, because the frogs love to just pick them off.
