I was wondering, if you made a ring of GS foam and then poured water in it, would the water leak out or stay in? Would there be a difference if I used the one for ponds or just regular expanding foam? I am trying to figure out a way to make a natural looking pond.

GS will eventually let water thru and get messed up
you would have to seal it, but then you can use pretty much anything if you're gonna seal it
epoxy or silicone

I think I know what you are attempting but water seems to always find a way. You can try to sequester an area as a pond area but in my experience it's much safer to assume that water will find it's way out and keep the same level throughout the tank. Use that to your advantage by having a false bottom and let the substrate dip down to pond level in a corner. Check out build journals on this site for details.
