Just curious about this. If all the possible tadpole deposition sites are filled in a viv with tadpoles (and assuming the frogs have been left to care for eggs themselves), will the breeding pair know to stop laying eggs?

It depends on the amount of food going into the enclosure. In non-egg feeding species, I've seen clutches deposited one on top of the other.

We also have anecdotal reports of obligates producing fertile clutches while egg feeding is occuring which is different than the reports in the wild.
