Lot of information here, it will take me awhile to work my way through it.
First question would be, what do you all think about the starter vivarium kits form a place like Josh's Frogs? Would this be a good starting point for a beginner or are there better options?

It looks prety good. I based my tank build off of their thumbnail kit, but some things can be swapped if you prefer something else. Like you could go with an egg crate false bottom or incorperate live moss vs the spagnum. Maybe use tropical springtails instead of temperate (but I only have experience with tropical springtails). You do still need fruit fly cultures and supplements because it doesn't look like its included. Maybe a heat pad if you keep your place very cold like I do. Take this with a grain of salt because I do not have frogs yet, I am currently raising tadpoles, so I can't be certain.
