Maybe some pictures might help?

I just take clippings and dump them in water. I try to keep any leaves out of the water but sometimes you can't depending on the size of the cutting and the type of plant.

I've rooted quite a bit this way.

Edit: I should mention do not use cold water. Cool water not warm but not cold.

A lot of plants will root in water, but not all of them. Pictures would def. help.
If I can't get to plants right away or I'm unsure, I tend to just put them into a ziplock bag to keep the humidity up. Maybe a small piece of damp paper towels or sphagnum (try not to touch the leaves with this damp piece). If the leaves are fleshy, you can prob. just throw them in the bag without any added moisture. You should try to find out what they are and pot them up as soon as you can. Hope this helps.

proper clone propigation techniques:
step 1: make a fresh cut with a sterile razor blade at a 45% angle
step 2: use the razor blade to gently scrape off the very outside layer of the stem from the bottom of the first cut up to about 1/2" up from the bottom.
step 3: use rooting hormone or honey and dip the fresh cutting into water tap of excess and then dip into the substance. (i prefer shultz POWDERED rooting hormone, its available at both wallmart and HD) if using the hormone make sure you tap off excess hormone on the side of the container.
step 4: soak jiffy pellets (other things will work but i will expplain the technique with these as they are easily used and widely available) in warm water until they have fully expanded. you can purchase them with a humidity tray , which is very helpful for the last step.
step 5: poke a small hole into your expanded pellets and gently place the prepared clone into the hole. now push the peat back in around the hole to give support to the cutting/ clone.
step 6: place the planted clones into a humidity tray and mist daily. they will wilt this is normal. in roughly two weeks the cuttings should be ready to transplant. (and if you used the jiffy pellets then you wont need to take them out and damage roots just plant them in the pellets)

p.s. papertowels are NOT good to use for this as the plant will create mirco-roots that will attach to the towel and be ripped off during transplant.

Almost all plants that are commonly (or uncommonly) used in vivariums will root with no real attention at all. All they need is a place with high humidity and light. I often use these large Tupperware containers to store cuttings. I never use rooting hormone since it just does not seem to be needed. There are exceptions and that's why knowing what you have is important.

It really would help to see some pictures and that way we can help you id them and also tell you more about their care.

i agree Mr whitmore, most terrarium plant cuttings dont need rooting hormone but without pictures i figured i would give a step-by step for a broad range of plants.
i have no idea what you have and of course with some pothos etc there will be little or no extra care needed than a humid environment.
also many things other than hormone can be used for more difficult cuttings including, as i stated, honey.
but again without pics its hard to say.

I actually have just a "plant" tank. it has a layer of coco peat and then sphagnum. I end up just laying the cuttings on the top. I then take cuttings from the clippings when they are well rooted. Not sure how long you are looking to put them on hold... If not long I also do the rubbermaid container thing. also this is with the basics... wandering jew, pothos, creeping fig, etc. I have a cork tube that I plant some of my broms on...

Is it at possible to just attach them to the wall and put some sphagnum on the root and leave it be.?.I have done this to a few cuttings I got and the always seem to grow.
