Maple leaves will work, but are among the fastest to decay. As a result, springtails love them

, but so does mold, which won't hurt anything, but can be unsightly in the viv.
Magnolia leaves seem to be the favorite, with some folks going so far as to order them from people that live in the southern U.S..
Oak leaves last a real long time as well, due to the tannins they contain. Oak leaves also make a good ingredient for tadpole tea.
Just about any leaves can be used, so long as they don't have strong oils, like eucalyptus, pine needles, poison ivy etc.
No need to remove the old leaves (in most cases), just add new litter when the old ones decay enough to not provide cover.
